2 large sweet potatoes, cubed with skin on or off
2-3 cloves garlic, finely chopped
1 heaping teaspoon Everyday Seasoning, or Chipotle Seaweed Seasoning
3-4 tablespoons light olive oil (or avocado oil)
1 teaspoon onion powder
1/2 teaspoon smoked paprika
1/4 teaspoon cinnamon
Salt and pepper to taste
1: Preheat the oven to 400˚F and line a 1/2 sheet baking sheet with parchment paper, or coat with oil of your choice.
2: Place cubed potatoes in a large mixing bowl, drizzle the olive oil, and season with Everyday Seasoning or Chipotle Seaweed Seasoning, onion powder, spices, minced garlic and salt and pepper to taste. Mix well, making sure that potatoes are well coated.
3: Evenly spread the coated potatoes onto the baking sheet and place in oven. Bake for 25-30 minutes, rotating the pan halfway through. Once crispy, remove from oven. Serve hot.
4: Garnish hash browns with over easy eggs, sour cream, fresh herbs or veggies and enjoy.
