This pasta benefits from a slow-simmered "sauce" (I use that word lightly because it is pretty much just oil, butter, garlic, white wine, and tomatoes), allowing the white wine to simmer until completely reduced. But it turns out great, even if you're short on time. The rest of the recipe comes together quickly, with Everyday Seasoning doing the lion's share of the work to flavor this dish with sweet earthy heat, roasted garlic, and subtly-savory seaweed. A recipe that upon first bite, I burst out "this might be the best pasta dish I've ever made." And it's so easy.
This recipe is based on "Shrimp Pasta" from Lidey Heuck, a la New York Times Cooking.
Ingredients:
- 1 pound long pasta, such as linguine, fettuccine or spaghetti
- 1 pound large peeled and de-veined shrimp (18 to 20 count)
- 4 tablespoons unsalted butter
- 3 tablespoons extra-virgin olive oil
- ¼ cup thinly sliced garlic (about 7 cloves)
- 2 pints cherry tomatoes or 2 large tomatoes, roughly diced
- 2 teaspoons Everyday Seasoning
- ½ - 1 cup dry white wine
Directions:
- Pat the shrimp dry with a paper towel and season with ½ teaspoon salt. In a large skillet, heat the butter and olive oil over medium heat. Add the garlic and cook until lightly golden, 1 to 2 minutes. Add the tomatoes and 1 teaspoon salt; cook, stirring occasionally, until most of the tomatoes have burst, 6 to 8 minutes.

Add the Everyday Seasoning, then cook for 1-2 minutes. Add the white wine and slowly simmer until most of the liquid has reduced. (Alternatively, you can add the pasta water now too and simmer on higher heat for 2 minutes.)
- Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Scoop out ½ cup of the cooking water, then drain the pasta in a colander and return it to the pot.

If you didn't add the pasta water before, add it once the liquid has reduced. Simmer slightly, and stir in the shrimp. Cook until they are just starting to turn opaque, about 3 minutes. Pour the sauce and the shrimp over the pasta and toss well. Transfer the pasta to bowls. Top with some lemon zest, parsley, Parmesan cheese, or more Everyday Seasoning. Enjoy!
